Restaurant Hog Sales:
Whole or half carcasses of USDA inspected, certified organic pork is available for Wednesday delivery,
year round.   Butchering into primal cuts is available at additional charge.

In order to control supply and quality, we started a breeding program on the farm in 2010.  Our 12 sow
herd is composed of pure bred Chester Whites and cross bred Duroc/Yorkshires.  Our boar is a purebred
Berkshire.   The cross bred offspring of these pairings make well muscled carcasses with lots of intramuscular
fat.  We raise the hogs to live weights above industry standard which results in a beautiful fat cap.  In
addition to certified organic commercial feed our hogs receive regular rations of farm raised certified
organic vegetables.  During dry weather months the market hogs are rotated weekly to fresh pasture
where they graze a mixture of grasses and legumes.  In wet weather months they receive a daily ration of
certified organic alfalfa hay and are housed in spacious, straw bedded greenhouses.  Year round, our
hogs have continuous access to fresh water and shelter from rain, wind, and sun.  Our experience shows
that this system, based on good food, fresh air, plenty of exercise, and very low stress, produces excellent
pork.
